Spicy citrus marinade

Spicy Citrus Marinade

Adding a small amount of sugar to marinades not only enhances flavour but also helps tenderize meats and interacts with proteins in meat, tofu, or other alternatives to create a rich colour. Makes 3/4 cup (175 ml) of marinade.

Ingredients

Garlic, minced 3 cloves
Orange juice 1/4 cup (60 mL)
Hot sauce 1/4 cup (60 mL)
Vegetable oil  1/4 cup (60 mL)
Brown sugar 1 tbsp (15 mL)
Salt 1 tsp (5 mL)
Cayenne pepper 1/4 tsp (1 mL)
Black pepper 1/2 tsp (2 mL)

Instructions

  1. Mix all ingredients. 
  2. Leave meat in the marinade for at least two hours. Use as a marinade for spareribs, pork chops, chicken, fish or tofu.
