Molasses is a thick, dark-brown syrup that is produced during the sugar refining process. In this recipe, the molasses adds moisture while contributing a rich earthy flavour to the bread. Makes 1 loaf (12 slices).
Ingredients
Sugar | 1/4 cup (60 mL) |
Egg | 1 large egg |
Molasses | 1/2 cup (125 mL) |
Vegetable oil | 1 tbsp (15 mL) |
Whole-wheat flour | 1 cup (250 mL) |
All-purpose flour | 2/3 cup (150 mL) |
Baking soda | 1 tsp (5 mL) |
Salt | 1/2 tsp (2 mL) |
Buttermilk | 1 cup (250 mL) |
Raisins (optional) | 1/2 cup (125 mL) |
Instructions
- Preheat oven to 350°F (180°C). Line a 9 x 5-inch pan with parchment paper.
- Beat together sugar and egg. Add molasses and oil.
- In a separate bowl, mix together the dry ingredients; add to egg mixture with buttermilk; combine well.
- Mix in raisins, if desired.
- Pour batter into the lined pan and let stand for 15 minutes.
- Bake for 30 minutes until a toothpick inserted into center of the loaf comes out clean.
Helpful Tips
To make your own buttermilk, place 1 tbsp (15 mL) of lemon juice or vinegar in a measuring cup. Add enough milk to bring the liquid to the 1 cup line on the measuring cup. Let stand for 5 minutes, then use as directed in the recipe.
